Easy Egg Salad with Spiralized Cucumber

Ingredients

English seedless cucumber
Blade A, noodles trimmed*

tablespoon
chopped fresh parsley
to garnish
*when spiralizing the cucumber
use soft pressure to yield thinner noodles
For the egg salad:
3-4
large hard-boiled eggs
preferably chilled (use 4 eggs if you don’t like it as creamy – use 3 if you like a creamy egg salad)

nonfat plain Greek yogurt

Dijon mustard

teaspoon
freshly squeezed lemon juice

teaspoon
garlic powder

chopped celery

pepper
Instructions
Place all of the ingredients for the egg salad into a medium bowl and mix well.
Place the cucumber noodles in a bowl and top with the egg salad and serve, garnished with parsley.
