Spiralized Cucumber and Tomato Quinoa Salad

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • salt and pepper
  • ½ cup cooked quinoa
  • 1 large English seedless cucumber Blade A, noodles trimmed
  • 2 roma tomatoes sliced crosswise into rounds
  • ¼ cup crumbled feta cheese
  • 1 chiffonade basil to garnish

Instructions

  • In a small bowl of dressing shaker, mix the oil, vinegar, salt, and pepper.
  • Place the quinoa, cucumber noodles, tomatoes, feta, and basil into a large serving bowl, pour over the dressing, and toss together. Serve.
