Chocolate Zucchini Almond Butter Squares
- 1 cup creamy almond butter
- 1 egg
- ¼ teaspoon salt
- ½ teaspoon baking soda
- ¼ cup coconut sugar
- ½ teaspoon pure vanilla extract
- ¼ cup vegan chocolate chips
- 1 small zucchini Blade D, noodles well chopped
Preheat the oven to 350. Grease an 8” x 8” baking dish with coconut oil spray.
In a large bowl, mix together the almond butter, egg, salt, baking soda, sugar, and vanilla until well combined. Fold in the chocolate chips and zucchini. Pour into the prepared dish, pressing down to spread evenly.
Bake for 25 to 30 minutes, or until golden brown and a toothpick comes out clean.
Let cool slightly before serving.
