Apple Pie Granola Yogurt Bowls

Ingredients

  • For the granola:
  • Coconut oil for greasing
  • 2 cups Bob’s Red Mill Rolled Oats
  • 2/3 cup slivered almonds
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • pinch of salt
  • 1/3 cup pure maple syrup
  • ½ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • For the rest:
  • 2 cups of preferred yogurt I like a thick Greek yogurt here or a Siggi’s
  • 1 apple Blade D
  • 2 tablespoons creamy almond butter can sub peanut butter or other preferred nut/seed better
  • optional: blueberries as an extra fruit

Instructions

  • Preheat the oven to 325 degrees. Lightly grease a baking sheet with coconut oil.
  • In a medium bowl, combine the oats, almonds, cinnamon, nutmeg, and salt. Add the maple syrup, applesauce, and vanilla and mix well to coat.
  • Spread the mixture out on the prepared baking sheet and bake until golden brown, about 25-30 minutes, stirring once halfway through to ensure even cooking. Let cool.
  • Divide the yogurt into bowls and top with apple noodles and granola. Add blueberries, if using. Drizzle with nut or seed butter and enjoy.

Recipe Notes

The granola serves 6-8, so save leftovers!
