Broccoli Kale Caesar Salad with Chicken

For the salad:
- 2.5-3 cups cubed cooked chicken
- 2 bunches broccoli florets finely chopped (about 3.5.-4 cups chopped florets) and stems spiralized with Blade D, noodles trimmed
- 3 cups finely chopped kale
- 1 avocado pitted, peeled, sliced
For the dressing:
- 2/3 cup raw cashews soaked overnight or for at least 3 hours
- 1/2 cup unsweetened plain almond milk
- 2 large garlic cloves sliced
- 1 tablespoon freshly squeezed lemon juice
- 2 teaspoons Dijon mustard
- salt and pepper
Blend together all of the ingredients for the dressing in a high speed blender and pour into the bottom of a large bowl. Add the cooked chicken, broccoli, kale, and toss together until all of the salad ingredients are coated in the dressing.
Divide the salad onto plates and top with sliced avocado.
