Broccoli Kale Caesar Salad with Chicken

Ingredients

For the salad:

  • 2.5-3 cups cubed cooked chicken
  • 2 bunches broccoli florets finely chopped (about 3.5.-4 cups chopped florets) and stems spiralized with Blade D, noodles trimmed
  • 3 cups finely chopped kale
  • 1 avocado pitted, peeled, sliced

For the dressing:

  • 2/3 cup raw cashews soaked overnight or for at least 3 hours
  • 1/2 cup unsweetened plain almond milk
  • 2 large garlic cloves sliced
  • 1 tablespoon freshly squeezed lemon juice
  • 2 teaspoons Dijon mustard
  • salt and pepper

Instructions

  • Blend together all of the ingredients for the dressing in a high speed blender and pour into the bottom of a large bowl. Add the cooked chicken, broccoli, kale, and toss together until all of the salad ingredients are coated in the dressing.
  • Divide the salad onto plates and top with sliced avocado.
