Spiralized Cabbage and Apple Waldorf Salad

- 1/2 large head of cabbage spiralized on blade A
- 2 red apples spiralized on blade C
- 1 cup red seedless grapes sliced in half
- 1 cup celery thinly sliced
- 1 cup walnuts chopped and lightly toasted*
- 1/2 cup mayonnaise + 2 tbsp I use avocado mayonnaise or plain greek yogurt
- 1/2 lemon juiced
- 1/2 tsp salt
- pinch of freshly ground black pepper
- * to toast - add to a skillet on medium heat and stir occasionally until lightly toasted
Add your spiralized cabbage and apples to a large bowl.
Top with grapes, celery and walnuts and stir to combine.
Mix in your mayonnaise, lemon juice, salt and pepper and mix well.
Serve immediately or store in fridge for several hours before serving.
