Dijon-Blue Cheese Dressing

Ingredients
- 2 tablespoons extra virgin olive oil
- 1 tablespoon sherry vinegar
- 1 teaspoon country dijon mustard
- 3 tablespoons crumbled blue cheese
- 2 teaspoons freshly squeezed lemon juice
- 1 garlic clove minced
- 1 pinch red pepper flakes
- salt and pepper to taste
Instructions
- Place all of the ingredients for the dressing into a food processor and pulse until creamy. Taste and adjust if necessary. Refrigerate until ready to use.
