Everything Bagel Potatoes with Eggs and Avocado

- 1 tablespoons extra virgin olive oil
- 1 medium red potato Blade C, noodles trimmed
- salt and pepper
- 1/3 teaspoon Everything Bagel seasoning I like the Trader Joe’s one!
- 1 small ripe avocado
- 4-6 large eggs depends on how many eggs you like in your serving
Heat the oil in a large skillet over medium-high heat. Once the oil is shimmering, add the potato noodles and season lightly with salt and pepper. Cover and cook, tossing frequently, until cooked through, about 10 minutes. Uncover, season with Everything Bagel seasoning and divide onto plates.
While potatoes cook, halve, pit peel and slice the avocado. Also, whisk the eggs.
Carefully wipe clean the skillet used to cook the potatoes and use it to scramble the eggs. Season the eggs with pepper and divide onto the plates with the potatoes. Add the avocado slices to the plates and serve warm.
