Everything Bagel Potatoes with Eggs and Avocado
While I prefer a whole wheat bagel to an Everything bagel when it comes to a breakfast sandwich, I much prefer these Everything Bagel seasoned spiralized potatoes over regular potatoes as a side breakfast dish any day! If you’re looking to step up your breakfast game, you’ll love these bagel inspired potatoes.
The potatoes are spiralized on Blade C on the Inspiralizer so they cook quickly and they have more surface area for the seasoning to cling to! You can also use Blade D (they’ll cook more quickly!), but the thicker blade will yield you tastier results.
I served up these potatoes with smooth avocado slices and simply scrambled eggs, but after I dove in, I realized they may be better with runny eggs! Give this a try with some fried eggs too, for a different consistency – the egg yolks will melt into the seasoned potatoes for more of a sauce like experience.
