Happy 1 Month Anniversary to Inspiralized!

It’s officially been one month since I started Inspiralized! I’d like to thank everyone for their support. Whether it’s 1 new Twitter follower or an extra 20 page views, I have been excited every single day to see this blog grow. The overwhelming encouragement from family, friends and friends of friends of friends has been extremely touching. Everyone’s kind words make me work harder and harder towards my goals. Most importantly, I have to thank my boyfriend. Without him, I would have never had the courage to take the plunge. He inspires me every day to dream bigger, and I’m so lucky to have him by my side during all of this.

It’s daunting to quit your job and grow something out of thin air, but entrepreneurship runs in my blood, so I think my success rate is high – my mother’s father, my father’s father and my father all started businesses. In all transparency, I don’t think of this blog as simply a food blog. Of course, I will always blog – I love to write. But I see spiralized pasta as a movement, as a revolution.

Speaking of revolutions, my boyfriend pointed out to me earlier this week that Bon Appetit magazine had a full-page feature in their August issue. He ran out and bought a copy and brought it home. I thought I’d share it with you:

That’s what I’m talking about! Soon you will see spiralized pasta dishes in restaurants all over the world. There will be prepackaged zucchini pasta in bodegas, grocery stores – even Whole Foods (maybe at their salad bar!) Spiralized pasta is the new cronut, but it will persist beyond the normal shelf life of a trend and become a staple on menus and in households all over the world (probably Italy will be the last – they’re so dang proud!)

I will be doing everything in my power to spread the spiralized revolution, and my dream is that Inspiralized will be the #1 go-to resource for spiralized vegetable pasta and will be the voice of the movement. That’s not much to ask, is it? I’m just trying to make Forbes’s 30 Under 30 list, no biggie.

remember a couple weeks ago when I sat in front of this same mirror, tucked my long hair into a sweater and debated whether to chop it all off or not? 💇🏻‍♀️ I think we all know what that decision was 🤪⁣

this is still by far the coziest sweater I own and they sell it in a yellow that's perfect for spring and I'm debating whether or not to get it 😬 I've been in a funk all week and can't seem to shake it. retail therapy moment?!⁣

actually, I put the @oculus goggles on the other night to go to a virtual beach, and I almost started crying... the sounds of the seagulls, the little turtle crawling on the sand, the bright sun, the sounds of the waves crashing, the white stand, the wind and the palm trees.... I had no idea how therapeutic the ocean and the beach are for me!⁣

making a batch of this VEGAN PUMPKIN SNACKING LOAF today 🍞! I love to have a few mini loafs in the freezer to easily defrost for breakfasts or snacks for the kids, but also for myself - slathered with nut butter and a little sprinkle of hemp seeds 🥜 or some honey, butter and cinnamon for the kids 🍯🧈  ⁣
