Air Fryer Tzatziki Salmon Bowls with Lemony Kale
4 salmon pieces (3oz each)
salt and pepper
4 cups finely chopped curly kale
1 tablespoon extra virgin olive oil
1 tablespoon freshly squeezed lemon juice
1 cup halved cherry tomatoes
1/3 cup pitted and sliced Kalamata olives
1/3 cup crumbled feta cheese
½ cup sliced cucumbers
2 @seedsofchange Quinoa and Brown Rice with Garlic pouches
tzatziki, to serve (about ½ cup)
Preheat the air fryer to 400 degrees. Season salmon with salt and pepper. Spritz the air fryer basket with cooking spray and add the salmon. Cook for 12 minutes or until salmon is cooked to your preference.
Meanwhile, prepare the bowls. Place the kale into a large bowl, drizzle with the olive oil and massage with your hands for 1-2 minutes until wilted and softened, then add lemon juice and salt and pepper. Divide the kale, quinoa, tomatoes, Kalamata olives, feta, and cucumbers evenly among 4 bowls.
Once the salmon is done, prepare the @seedsofchange rice per package instructions (90 seconds in the microwave.) Divide the rice among the bowls and top each prepared bowl with the finished salmon and a couple tablespoons each with tzatziki. Serve. #BeASeedofChange...

minestrone brings me back to my childhood. 👧🏻 my mom nursed all my illnesses with minestrone and my grandmother still makes pasta fagioli for me (now one of my husband's favorites from her!) minestrone is a vegetable soup typically made with a rice or pasta, but here, we're using farro - it's nuttier, a sexier ancient grain, and it makes for a heartier soup. 🙏🏼
there's kale for a winter vibe, cannellini beans for more protein, and a dollop of pesto on top for a powerful finish. 🥬 seriously, this soup will become your winter fav - and it saves well for meal prep! you can amp it up by adding some crumbled sausage or swap the pesto for shaved Parmesan and basil. make this soup your own and make sure to share when you do!

we’re flying back to new jersey on friday and already starting to miss it here in florida ☀️ the weather’s nice, but I’ll most miss all the time spent with our family together 🙏🏼 for the past (almost) 2 years, we’ve spent a lot of time in florida with my family and that’s been the silver lining of the pandemic 🙏🏼 right now, my grandmother is here and that time is extra special.
