fruit salad with lemon dressing 👇🏼
prep time: 15 minutes
yields: 6 to 8 servings
1.5 cups sliced strawberries
1.5 cups cantaloupe balls
1.5 cups halved green grapes
3 medium kiwis, peeled and sliced into 1/4-inch thick rounds
1 cup blueberries
1 cup raspberries
1/2 cup pomegranate arils
1.5 tablespoons fresh lemon juice
1 tablespoon honey
3/4 teaspoon vanilla extract
1 teaspoon minced fresh mint
In a large bowl, combine the strawberries, cantaloupe, grapes, kiwi, blueberries, raspberries, and pomegranate arils.
In a separate small bowl, whisk together the lemon juice, honey, vanilla extract, and mint. Add the lemon dressing to the fruit and toss to combine. Serve immediately or store, covered, at room temprature or in the fridge for up to 3 days. ...
