I looove egg salad sandwiches. They were easy to make, flavorful, protein-packed, and totally versatile – adding a little extra seasoning can transform them.
But today, I’m sharing my go-to easy egg salad recipe – with spiralized apples, which adds the perfect sweetness needed to turn this into a lunch staple!
There’ a secret….
The mayonnaise is not mayonnaise – it’s a fayonnaise, made with Greek yogurt! I love using Greek yogurt instead of mayonnaise because it’s lower in fat and has almost 10 times more protein than mayonnaise!
So, if you’re a protein maniac (hello body builders!), then this recipe is for you.
When you’re making these spiralized egg salads, you can use different crunchy veggies to add more dietary fiber and texture, such as kohlrabi, jicama, zucchini, or even cucumbers (although that can get a little watery if you’re not careful.)
There’s not much to it – pretty much just dump everything into a bowl, mix, season and go!
While my absolute favorite way to enjoy egg salad is with some freshly baked multigrain bread slices, I really enjoy bell pepper cups! They add a refreshing bite and are hydrating.
Other ways to enjoy these are in lettuce cups (like in Monday’s post), stuffed into pita, over salad, or even just in a bowl with some walnuts!

Video: Easy Spiralized Apple Egg Salad in Bell Pepper Cups
Ingredients
- ?1/2 cup plain Greek yogurt
- ?2 hard boiled eggs chopped?
- 1 celery stalk diced
- 1 ? ?teaspoon Dijon mustard
- ?1/4 teaspoon garlic powder
- 1 ?teaspoon lemon juice
- salt and pepper to taste
- 1 apple of choice Blade C
- ?2 bell pepper cups sliced in half, seeded?
Instructions
- ?Combine the yogurt, eggs, celery, dijon, garlic powder, lemon juice, and salt and pepper in the bottom of a medium mixing bowl. Mix well. Add in the apple noodles and mix until noodles break apart and are coated in the mixture. Stuff into bell peppers halves!
