April Recipe Challenge – Inspiralized Community

INSPIRALIZED - Udi's Gluten Free
Remember the delicious Spicy Chicken with Plantain Rice and Avocado Mango Salsa? Wellll it’s that time of the month again! It’s time to vote on your favorite recipe from the April Recipe Challenge on the Inspiralized Community.

With April’s’ challenge, we have more than double the recipes! The voting is going to be tough (these recipes are sensational!), so I’ll need everyone’s help – use the voting poll at the end of this post to select your pick.

And, this time around, we have a sponsor! Udi’s Gluten Free will be awarding the winner with a gift basket full of Udi’s goodies!

That’s right – Udi’s Gluten Free is kindly partnering up with Inspiralized to sponsor the Inspiralized Community‘s Recipe Challenges for the rest of the year! This means that each month, you’ll have a chance to win a basket full of gluten-free products from Udi’s (valued at $75!) If you didn’t know already, they make the #1 best-selling gluten-free bread. I’ve had it – it’s awesome. Their Snickernoodles are also incredibly addictive!

Thanks to Udi’s for their generosity!

Like last time, I’ll be recreating the winning dish on the blog and sharing the recipe with everyone. You can get all of these recipes right away by joining the Inspiralized Community (it’s free!)

April’s Recipe Challenge was “Easy Side Dishes.” Members were instructed to:

It’s time to come out of winter hibernation and start having people over to enjoy good food and better weather! Whip up a side dish using a spiralized veggie – it doesn’t have to be fancy, just a good ‘ole side!

Of course, If you haven’t entered already, check out the May Recipe Challenge: the theme is “Picnic Pasta (or Pasta Salad)”:

Memorial Day is JUST around the corner, so we’ll be eating lots of fresh and light pasta dishes at picnics and summer parties! Inspiralize your favorite summer pasta or pasta salad and share with everyone!

I don't really understand the poll. It doesn't seem to correspond with the side dishes listed.
Kyris says:
You have to go to the "April Recipe Challenge" link in the first paragraph of this page. Recipes are there but I'm still not sure how to vote.
Sorry about that - just a little glitch, but it's fixed! Thanks!

Theresa says:
how do you get to the recipes to try them?
Debra says:
I'm a little confused as well- the dishes to be different than what we voted on?
Rocky says:
This isn't making sense again this voting session. I couldn't figure out how to do it last month and this month isn't any better. Help!
Rocky - just select one in the poll!
Rocky says:
Got it. They match now :)
YUM! I love the veggie fritters! Looks so tasty!
Marjolijn says:
My choice does not seem to be winning yet, I'd love the recipe though :-) It's the cucumber noodle salad with salsa, that just sounds delicious.

Can we have access to the recipes even if they don't win? It would be easier to vote if I could see the ingredients.
Julie, of course! All of their recipes are posted in the Inspiralized Community (which is free to join - community.inspiralized.com). Thanks!
Joanne says:
Those were tough choices! Everything looked so good!

I’ve got these BUFFALO TOFU WRAPS on the menu for next week - there’s a secret ingredient to make the tofu crisp up in the air fryer (you’ll see in the video!) 🥑🥬🥕⁣

and since we all appreciate a good lu review, he thought these were buffalo chicken wraps when I first served them to him! 😜 ⁣

grab the recipe on the blog! 🙌🏼⁣

ramen is the perfect meal for this season of life. it’s cozy, comforting, filling, and satisfying. 🙏🏼 needless to say, I’ve been eating tons of ramen bowls lately, and I’m extra excited to share this one with you, a take on Japanese miso ramen: Miso Noodles with Smoky Tempeh (using @lightlifefoods Original Tempeh) and Kale. 🥬 🍜 #LightlifePartner⁣

this is kind of like two recipes in one, because this smoky tempeh is good on everything – in sandwiches, on salads, in grain bowls - it’s my go-to flavor when I’m making tempeh (especially for those who aren’t as far along on the tempeh train as I am.) the other recipe is the simplest miso ramen with kale, which you’ll be making over and over again. 👏🏼 also, you can simply sub in @lightlifefoods’ Smoky Tempeh product here, to save time!⁣

you can find @lightlifefoods Original Tempeh at @acmemarkets or @wholefoodsmarket, but use their Store Locator on their site to find out where it’s sold near you. 🛒⁣

recipe below 👇🏼👇🏼⁣

Miso Ramen with Smoky Tempeh and Kale⁣
Serves: 4⁣

2 tablespoons extra virgin olive oil⁣
8-ounce package @lightlifefoods Original Tempeh, cubed⁣
¼ cup soy sauce, low sodium⁣
2 tablespoons maple syrup⁣
¼ teaspoon smoked paprika⁣
1 teaspoon liquid smoke⁣
1/2 teaspoon garlic powder⁣
2 garlic cloves, minced⁣
1-inch knob ginger, minced⁣
4 cups vegetable broth⁣
1 tablespoon miso paste⁣
1 tablespoon low-sodium soy sauce⁣
4 cups finely chopped kale⁣
12 ounces ramen noodles⁣

Heat half the oil in a large skillet over medium heat. Add the tempeh slices and cook for 5 minutes until browned, stirring frequently.⁣

While tempeh cooks, stir together ¼ cup of water, soy sauce, maple syrup, smoked paprika, liquid smoke, and garlic powder. Pour that over the cooked tempeh and stir to coat. Let cook another 5 minutes or until moisture is evaporated and tempeh is browned. Set aside on a parchment lined plate.⁣

Heat the remaining oil in a large pot over medium-high heat. Once oil is shimmering, add the garlic and ginger and cook for 1 minute or until fragrant. Add the broth and 2 cups of water and bring to a boil over high heat.
