April Recipe Challenge – Inspiralized Community

Remember the delicious Spicy Chicken with Plantain Rice and Avocado Mango Salsa? Wellll it’s that time of the month again! It’s time to vote on your favorite recipe from the April Recipe Challenge on the Inspiralized Community.

With April’s’ challenge, we have more than double the recipes! The voting is going to be tough (these recipes are sensational!), so I’ll need everyone’s help – use the voting poll at the end of this post to select your pick.

And, this time around, we have a sponsor! Udi’s Gluten Free will be awarding the winner with a gift basket full of Udi’s goodies!

That’s right – Udi’s Gluten Free is kindly partnering up with Inspiralized to sponsor the Inspiralized Community‘s Recipe Challenges for the rest of the year! I’ve had it – it’s awesome. Their Snickernoodles are also incredibly addictive!

Like last time, I’ll be recreating the winning dish on the blog and sharing the recipe with everyone. You can get all of these recipes right away by joining the Inspiralized Community (it’s free!)

April’s Recipe Challenge was “Easy Side Dishes.” Members were instructed to:

It’s time to come out of winter hibernation and start having people over to enjoy good food and better weather! Whip up a side dish using a spiralized veggie – it doesn’t have to be fancy, just a good ‘ole side!

Memorial Day is JUST around the corner, so we’ll be eating lots of fresh and light pasta dishes at picnics and summer parties! Inspiralize your favorite summer pasta or pasta salad and share with everyone!

My choice does not seem to be winning yet, I'd love the recipe though :-) It's the cucumber noodle salad with salsa, that just sounds delicious.
