We’re making my Thai Quinoa and Zucchini Noodle Salad, my “what should I make for dinner, I don’t want to turn on the stove?” kinda meal.
Seriously, I make this ALL.THE.TIME. What’s great about it is that it lasts well in the refrigerator – the longer the noodles sit in the creamy almond butter sauce, the more they soften (the lime juice acids help wilt the noodles.)
