HERE’S THE RECIPE 👇🏼👇🏼

(veggie packed) bacon and avocado fried rice ⁣🥑🥓🍚
serves 2 ⁣
⁣
ingredients⁣
~ 1 tablespoon avocado oil (or olive oil) ⁣
~ 3/4 cup frozen veggies (I like a string bean, corn carrot, and pea blend) ⁣
~ garlic powder⁣
~ salt and pepper⁣
~ 10oz pouch of microwave rice⁣
~ 2 large eggs⁣
~ 1 tablespoon low-sodium soy sauce⁣
~ 1 ripe avocado, insides cubed ⁣
~ 4 pieces of crispy cooked bacon, cut into pieces ⁣
~ 1/2 teaspoon white sesame seeds⁣
~ red pepper flakes⁣
optional⁣
⁣
directions⁣
heat the oil in a large wide pan. add the vegetables and season with some garlic powder (about 1/2 teaspoon), salt, and pepper. Saute the veggies until cooked through, about 5 minutes. meanwhile, microwave the rice. once veggies are cooked, add the rice, stir, and create a cavity in the middle of the mixture. crack in the eggs, and scramble until cooked through. fold the eggs into the rice mixture and stir to combine. season again with salt and pepper, drizzle over with the soy sauce, stir well, and then turn off the heat. add the avocado, bacon, stir to combine and then sprinkle with sesame seeds and add red pepper flakes. taste, and adjust with more soy sauce if needed. serve!⁣

in my suburb era 🏠✨ I’m loving all the little parts of the suburb life, from porch laundry to walks around our neighborhood 🚲

if you had asked me a year ago about moving to the burbs, I would’ve told you how much I loved jersey city and I’m not ready to leave. it’s humbling how much timing plays into life. ⏰

we’re ready now, and I don’t know who’s more excited- the kids, me, or Lu 😂 he’s really leaning in 🛠️

the second the kids get to the house, they don’t go inside until it gets dark out. they’re loving the space, and it’s beautiful to see them run around safely. no more, “stop at the street!!!” or “watch that parking garage!” 🫣

I feel like I’m going to become the best version of myself here. I feel like I can breathe 😮‍💨

and thanks to everyone being so patient as I transition our family into this house and welcome this big lifestyle change. you are all the best, and I’m so grateful to have such a loyal crew ❤️

EASY PAINTER’S TAPE & WATER BOTTLE GAME 👦🏼💧

I love painter’s tape. it’s probably my most used “craft” item. we use it for everything, from arts & crafts painting to making up floor games like this one. I don’t know what I’d call it, maybe a kind of waterbottle skee-ball? regardless, Luca played for a solid 30 minutes and kept coming back to it all day (that’s what I love about painter’s tape - it sticks well but doesn’t ruin your floors, so you can keep it up for as long as you’d like.) roma joined in for some friendly competition, too!⁣
⁣
the steps and rules are easy.⁣
✔️make a few boxes with painter’s tape in a space on your floor (tip: depending on age, keep the box sizes attainable but not too easy.)⁣
✔️assign the boxes values by marking them with a marker or similar. I went with a 1/2/3/4 system.⁣
✔️use a plastic water bottle filled about halfway with water (too much water will make the bottle topple. too little won’t let it slide easily.)⁣
✔️grab a sheet of paper to keep score. our goal was set for 11 points! ⁣
✔️have fun! ⁣

for those of you parents out there who needed to hear this. ❤️ there have been times when I’ve shouted too loudly, lost my cool, or told the kids that they’re “driving me crazy” and I feel so bad about it. but we all have those days. it just bottles up!

I just always think back in my childhood and the feeling that I have. I know my mom lost her cool and said the wrong things at times, but I don’t remember any of that. all I remember is how she made me feel. loved, secure, and comfortable.

so when I’ve had a particularly tough day, I read myself this quote and it puts things back into perspective. parenting is a tough job and we’re going to get it “wrong” sometimes, but the fact that we beat ourselves up over those moments means we’re doing a great job. we care. and our kids feel that.
