Alongside those chips and guac, make something spiralized! Today, I’ve rounded up my best Mexican-themed recipes for you to make for dinner – just don’t forget the margaritas!

Before we get to the roundup, now that we’re almost in May (ahh!), we’re reinstating the Recipe Challenges in the Inspiralized Community! With these, I’m challenging YOU to be the recipe writer and come up wtih your best recipes. If you’re not a member already, sign up now – it’s free!

MMM happy cinco de mayo indeed!

Love your recipes. Just getting into spiralizing and it's so much easier than I expected - always thought it would be so much work, but very easy. Needed a Mexican themed snack for my monthly dinner group and I think the black bean & butternut squash noodle tacos will be perfect. BTW, this dinner group is composed of women who have known each other for over 50 years - we started out to learn how to cook and now it's getting together and sharing the newest events in our lives - we've been meeting every month for over 40 years. Great way for me to introduce them to spiralizing.
