Cinco de Mayo to me means meeting up with my friends for margaritas and an unlimited supply of guacamole and chips.

I mean, if any day of the year you should indulge in chips and guac, it should be Cinco de Mayo!

Alongside those chips and guac, make something spiralized! Today, I’ve rounded up my best Mexican-themed recipes for you to make for dinner – just don’t forget the margaritas!

  • Love your recipes. Just getting into spiralizing and it's so much easier than I expected - always thought it would be so much work, but very easy. Needed a Mexican themed snack for my monthly dinner group and I think the black bean & butternut squash noodle tacos will be perfect. BTW, this dinner group is composed of women who have known each other for over 50 years - we started out to learn how to cook and now it's getting together and sharing the newest events in our lives - we've been meeting every month for over 40 years. Great way for me to introduce them to spiralizing.
