While I love using the spiralizer to make big ‘ole healthy bowls of Italian pasta and Vietnamese noodle bowls, I also love using this beloved kitchen gadget for preparing simple sides.
Let’s face it: chopping, cubing, dicing and slicing potatoes is monotonous. Not only is it uneventful, it’s predictable in flavor and texture: I’m pretty sure we all know what a cubed roasted potato tastes like.
Now enter: potato noodles.
There’s something about the potato being in noodle form that changes the game. The consistency and texture is more exciting, and the taste of the potatoes transform when they’re in noodle-shape.
If you’re watching your starch or carb intake and are trying to cut back on the potatoes, don’t fret: you get more bang for your buck with spiralized potatoes (one small red potato yields over 1 cup of dry noodles!) If you were to simply dice or cube a potato, you’d only get a handful of pieces.
These potato noodles are THE best. I made them over Christmastime for my family and they were a hit. When I posted that picture on Instagram, based on your responses, I knew I had to eventually post my recipe – which is simple, easy and super flavorful!
The spices are simple – olive oil, garlic powder, salt and pepper. Nothing fancy – with this side, we let the food do the talkin’. The few minutes of broiling at the end crisp them up lightly, while letting the light dusting of parmesan really bake into the potato noodles.
If you’re throwing a dinner party and need a starch, try these potato noodles. Your guests will be impressed, trust me! Plus, you don’t need that many potatoes to serve 6, so if you’re having an intimate dinner, just grab 2 or 3 medium red potatoes at the store and voila – along with some pantry items, you have a healthy side dish!
They go great, of course, with a juicy steak – or try with some rosemary chicken or even a baked fish!
Might I add, they’re pretty to plate, especially with a light dusting of minced parsley for freshness?

Easy Roasted Garlic-Parmesan Potato Noodles
Ingredients
- 2 pounds red potatoes Blade C, noodles trimmed
- 1 tablespoon extra virgin olive oil
- salt and pepper to taste
- ½ teaspoon garlic powder
- 1.5 tablespoons freshly grated parmesan cheese
- 2 tablespoons minced parsley to garnish
Instructions
- Preheat the oven to 425 degrees.
- Place the potato noodles in a large mixing bowl immediately after spiralizing and pour over olive oil. Toss gently with your fingers to combine and then lay out on a parchment-paper lined baking sheet. Season with salt, pepper and garlic powder and roast for 12-15 minutes or until they start to turn golden brown.
- Remove the potato noodles from the oven and set it to broil. Sprinkle the potatoes with parmesan cheese and set back in the oven for 3-5 minutes or until golden brown, careful not to burn (a few burnt edges are okay.)
- Remove from the oven, garnish with parsley and transfer to a serving bowl. Serve immediately.
