To me, football season is the best sport season there is! All of the bars are crowded with handsome, testosterone-filled men acting like little boys, jumping up and down when their team wins and sulking when their team throws a pick-six. How adorable

I really do enjoy the camaraderie in general and how it brings everyone together on Sunday and Monday nights. For me, more than anything, it’s always the food that lures me in. How can you not love a sport that revolves around a solid “spread”? Chilis, dips, chips & guac… oh the guac! If you Google “Superbowl party” your search results will yield countless recipes. Actually, I’m dreaming of helmet toothpicks and football napkins already…

HOWEVER, most of these recipes for football gatherings are packed with unhealthy fats and loads of carbs and calories. Since everyone loves pizza, I decided to make a pizza spaghetti using zucchini noodles, pepperoni, and mozzarella cheese. Men can’t refuse pizza, so I don’t want to hear any excuses, boys! 

If you’re hosting a party, make a big batch of this and place it in large aluminum baking dishes and serve with spoons, plates, and crusty whole grain bread. You’ll want to dip into this sauce – the gooeiness of the melted mozzarella and the oregano & basil flavors in the seasoned tomato sauce are enough to leave your guests asking for the recipe.

Secretly, I hope my boyfriend invites some friends over for a game this season so that I can make them all this pepperoni pizza zucchini spaghetti…. Lu, are you reading?

Football Season & Pepperoni Pizza Zucchini Spaghetti

Ingredients

  • For the pasta:
  • 1.5 zucchinis Blade C
  • 1/3 cup chunkily-chopped mozzarella
  • 10 pepperoni slices
  • 1-2 slices of crusty whole grain bread optional, for dipping
  • For the pizza sauce:
  • 1 14oz can of crushed tomatoes
  • 1/3 cup chopped red onions
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1/4 tsp red pepper flakes or less, if you don't like spice
  • 1 tsp dried oregano flakes
  • 1/2 tsp dried basil flakes
  • 1 tsp tomato paste

Instructions

  • Place a large skillet over medium-low heat and add in the olive oil.
  • Once the oil heats, add in the garlic. Cook garlic for 1 minute and add in the red pepper flakes. Cook for 30 seconds and then add in the chopped onion. Stir and cook for about 2 minutes or until onions begin to soften.
  • Add in the crushed tomatoes, season generously with salt and pepper and add in the oregano and basil flakes. Stir to combine.
  • Let cook, stirring occasionally, for about 15 minutes or until the sauce fully reduces.
  • Once the sauce reduces, add in the zucchini pasta and pepperoni. Cook for about 2 minutes or until zucchini begins to soften and is heated through.
  • Add in the mozzarella cheese, cook for another 30 seconds, and then pour into a bowl and enjoy!

I have made this recipe 3 times in the last month (without the pepperoni) and we love it. My 4 year old had no idea he was not eating spaghetti. He helped me spiral slice the zucchini today and was amazed that it made noodles. Thanks so much for the great recipes!

I just wasn't a believer that zucchini was able to sub for pasta. I was completely wrong! My husband and I actually like the zucchini better than pasta. This dish was absolutely delicious and I will be inserting into our dinner rotation (which is much needed after 31 years of marriage). My changes and additions were these: I used fresh basil and oregano and also parsley. Along with the pepperoni, I added two cooked links of sweet italian sausage that I sliced into rounds. To up the veggies, I added sautéed mushrooms and some sliced roasted red pepper. I actually forgot to put in the mozzarella but added fresh Romano cheese. This dish is a winner! Thank you for the recipe!

air fried shrimp tacos with pineapple mango salsa and guacamole, another meal made fully from a @wholefoods shop! 🌮🍍🥑🍤⁣

~ corn tortillas⁣
~ guacamole⁣
~ pineapple & mango salsa (fresh prepared foods)⁣
~ sliced red cabbage (pre-sliced container)⁣
~ @sirkensingtons chile lime crema⁣
~ cleaned & deveined shrimp ⁣
~ panko breadcrumbs ⁣

preheat the air fryer to 400 degrees. dredge the shrimp in egg and dip in panko (toss the panko with paprika, onion, chili, & garlic powder, salt, and cumin.) add in a single layer to the air fryer and cook for 7-10 minutes, flipping halfway through (they’re done when golden brown and C-shaped.) spread some guacamole on the tortillas and top with shrimp, cabbage tossed with juiced lime, pineapple mango salsa, and drizzle with the bottled crema. easy peasy! 👏🏼 ⁣

super easy lunch idea, made (almost) entirely from the freezer and 100% from @wholefoodsmarket, so next time you go there to shop, grab the following items and make this Teriyaki Tofu and Pepper Riced Cauliflower Stir Fry👇🏼👇🏼

~ frozen riced cauliflower, stir fry style⁣
~ frozen three pepper blend (sliced bell peppers)⁣
~ organic teriyaki sauce⁣
~ @wildwoodfoods teriyaki baked tofu⁣
~ for garnish: white sesame seeds, red pepper flakes⁣

heat a tablespoon of neutral oil in a medium skillet. add the bag of riced cauliflower and sauté until softened to your preference (about 5 minutes for rice-like, IMHO.) set the cauliflower aside in a bowl. add a couple handfuls of bell pepper strips and half the package of tofu, cubed. pour over some teriyaki sauce (I use about 1/3 cup), stir, and let cook until peppers are totally soft, another 3 to 5 minutes. top the riced cauliflower with the teriyaki tofu and peppers. garnish with sesame seeds and red pepper flakes. enjoy!⁣ 🥡

tomorrow we’re going to my BIL’s to hang out with Lu’s side of the family, and I’m excited to see everyone (it’s been YEARS!) and have the kids spend time with their cousins, aunts and uncles 🙏🏼

for the curry, simmer cauliflower, carrots, a jar of @mayakaimalfoods, and 2 cups of @bonafideprovisions veggie broth in a large pot for 20 minutes or until thickened to your preference. add cooked lentils, stir, and serve with jasmine rice, chutney and toasted naan. easy 30 minute meal 👏🏼 not exactly thanksgiving-friendly, but worth a share!
