Edamame Guac Burger with Sriracha Mayo 👇🏼
Makes 2 burgers
For the burger:
1 tablespoon avocado oil
1 @lightlifefoods Plant Based Burger
2 hamburger buns
For the guac:
1/4 cup frozen shelled edamame, thawed
1 garlic clove, roughly chopped
1 ripe avocado, peeled and pitted
2 tablespoons finely diced red onion
1/2 small jalapeno, finely diced
2 tablespoons minced cilantro
1/2 ripe lime, juiced
salt and pepper
For the sriracha mayo:
2 tablespoons plant-based mayonnaise
1/2 tablespoon sriracha
1 teaspoon freshly squeezed lime juice
1 pinch garlic powder
salt to taste
Heat the oil in a large skillet over medium-high heat. Once oil is shimmering, add the burger and cook for 5 minutes per side or until cooked through and browned. After burger is done cooking, place in the burger buns cut-side down and let them cook until warmed and toasted, about 1 minute.
Meanwhile, make the guac. Place the edamame in a food processor and pulse until creamy with some chunks. Place the edamame in a medium mixing bowl and add the garlic, avocado, onion, jalapeno, cilantro, lime, and season generously with salt and some pepper. Mix until made to your guacamole preferred consistency. Set aside.
In a small bowl, whisk together the mayo, Sriracha, lime juice, garlic powder, and season with salt. Set aside.
Build your burgers. Place a patty on the bottom slice of the bun. Top with guacamole. Drizzle with sriracha mayo and top with lettuce, then with the top slice of the bun. Repeat with the remaining burger bun and serve. ...
