Potato Toasts with Green-Pea Avocado Mash and Shaved Egg

There are three little secrets that make this recipe outstanding (if you missed my post on why I’m going to brag more, read it!):

  1. The peas in the avocado “mash” – it gives it texture, sneaks in veggies, and adds more flavor!
  2. The shaved egg – if you’ve never shaved an egg before, welcome to my world! It has a cheesy texture (without the cheese) and sneaks in protein – no more boring fried egg on your avocado toast!
  3. POTATO TOAST. We’re ditching traditional bread in exchange for a roasted potato “slab” which is much more nutritious, flavorful, and salty. I love serving them to the baby, actually!

So you load up the mash on the potato slabs, sprinkle with the shaved egg, and top with crunchy radishes for a new spin on the classic avocado toast.

remember a couple weeks ago when I sat in front of this same mirror, tucked my long hair into a sweater and debated whether to chop it all off or not? 💇🏻‍♀️ I think we all know what that decision was 🤪⁣

I had no idea how therapeutic the ocean and the beach are for me!⁣

making a batch of this VEGAN PUMPKIN SNACKING LOAF today 🍞! I love to have a few mini loafs in the freezer to easily defrost for breakfasts or snacks for the kids, but also for myself - slathered with nut butter and a little sprinkle of hemp seeds 🥜 or some honey, butter and cinnamon for the kids 🍯🧈  ⁣
