I’ve been getting a lot of questions lately about my exercise routine, now that I’m pregnant. People see on @getinspiralized that I’m still spinning and jump squatting and I’ve had a lot of panicked, “is that okay for the baby?!” messages.

I’ve loved getting to know some of you pregnant mamas out there, and I’m happy to share my experiences with you.

During this pregnancy, I have craved more meat that I have craved in my entire 30 year existence on this planet.

Sounds dramatic, but it feels dramatic – as someone who eats primilary plant-based, it’s been odd to simply see the words ‘lamb chop’ at a restaurant and immediately need it.

Of course, I’m listening to my body (seems like the easiest, least stressful way to manage your pregnancy – in all aspects), and letting myself have it if I really crave it. One of the most recent cravings I had was for a bone-in pork chop (yes, specifically, bone-in.)

In the summertime, zucchinis grow so quickly! They seem to almost grow like weeds, popping up everywhere.

Of course, making a spiralized pasta or salad is a quick, easy, go-to way to use up all that garden zucchini. But, if you’re looking to switch it up, try adding your spiralized zucchini into frittatas!

One of my favorite things to do in the summertime is to go to the farmer’s market, pick up some fresh eggs, veggies (zucchinis included), come home, and make a “farmer’s market frittata.” That’s where the inspiration came for this dish!

Ever since my girl Gina over at Skinnytaste posted these watermelon pizzas, I knew I wanted to do something fun with watermelon too.

Watermelon has such a refreshing taste, it’s perfect to be sprinkled with flavorful toppings, like bacon and this Greek yogurt “ranch.”

And if you’re like me, I always end up with wasted watermelon in the refrigerator, because it’s impossible to eat a whole watermelon quickly enough! This is your solution!

Today is Inspiralized’s four year anniversary/blogiversary!! And we’re celebrating with zoodle bread!

Four years ago today, I started Inspiralized. The morning of this day, I walked with Lu as he went to work and I stopped off at a coffee shop on the way, opened up my laptop, and started from scratch.

It’s surreal to think of what all has happened since that day four years ago, but everyday I wake up feeling blessed, grateful, and excited about what the future holds! The next two days are two days that completely changed my life forever.

Today, four years ago, I quit my corporate job. I walked into my boss’s office, I quit, and I walked home, bought the domain “Inspiralized.com” and felt a level excitement for the future that I could never adequately put into words.

I felt like I had this huge opportunity in front of me and I knew I was going to take it. I could barely sleep that night, I really felt like a kid on Christmas Eve.

Today is a very special day for me and Lu – it’s our two-year wedding anniversary!

First a weeklong babymoon in Hawaii and now our two year wedding anniversary, my heart is so full, it could burst. I don’t know if it’s the pregnancy hormones or what, but I’m feeling extra in-love, grateful, and blessed these days.

I can’t believe it has been two whole years since Lu and I got married – time is flying by, I still feel like a newlywed! I actually wrote a post last night on Alissandrab on what I’ve learned after two years of marriage.

I am officially back from our babymoon in Hawaii and jumping right back into the swing of things with these elote-style zucchini noodles, adapted from this Cooking Light recipe.

We flew back on Saturday (lost the whole day traveling) and arrived on Sunday morning around 6:45am. We hopped right in bed, slept until 12:30pm and then my family came over to celebrate Father’s Day.

Needless to say, I woke up this morning tired, but ready to focus on everything spiralized!
