Yesterday night, I got home from a weekend trip to Winston-Salem, NC for an alumni event at my alma mater, Wake Forest University.

It was a great weekend full of nostalgia, good eats, exploring, and showing my husband this part of my life he never knew about. We even drove to Chapel Hill, NC, one of my favorite college towns, to grab lunch and walk around.

When we got back to our apartment around 10:30pm last night, I crashed!

Many people ask me if I’m Paleo, Gluten-Free or Vegetarian. I get the question a lot, because my food tends to skew more veggie-friendly and gluten-free.

However, I’m an omnivore, I eat everything. From quinoa to pizza to the occasional sausage dinner, I eat all food groups, in moderation.

I don’t think I could ever be Paleo. I eat a LOT of lentils, beans, and grains. Like, it’s a huge part of my diet. If I were to cut out those food groups, I think I’d starve, because I wouldn’t want to supplement them with the alternative (higher animal protein intake.)

Some nights, I just don’t feel like cooking. YES, it happens.

I’m always tempted to just Seamless something, but unfortunately, there aren’t many healthy options in Jersey City just yet. This city is still evolving, and it’s no NYC (if I lived in NYC I think it’d be so hard NOT to Postmates from places like Sweet Green 24/7.)

I absolutely love this beet noodle salad. It’s so colorful, fresh, and easy to make. It’s a one bowl wonder and it saves well in the refrigerator for lunch leftovers!

The only hurdle? Getting over the fact that beets are messy!

Once you get over that hurdle and spiralize your beets, you’ll be so thankful you did, because this salad is gourmet worthy.

I’ve been really into curried flavors lately. Curried soups, curried salads, and curried vegetables.

In particular, curried cauliflower, because I love the texture and flavor combo. The curry powder gets into all the nooks and crannies of the cauliflower floret, the flavor intensifies as the veggie bakes.
