My diet and why I don’t eat certain foods but am open to them

My diet and why I don't eat certain foods but am open to them

After sharing on Instagram stories yesterday that I don’t eat dairy during the weeks (after freakishly getting a craving for Greek yogurt in the afternoon) and that I don’t eat beef, I got a lot of messages asking me, “Why don’t you?”

So, I figured I would explain my diet a bit and why I choose to eat the way I do!

I say this every year, but I really, really mean it this year: time is FLYING by.

Triple Chocolate Zucchini Noodle Protein Muffins

Triple Chocolate Zucchini Noodle Protein Muffins

The past few weeks have been crazy busy with work. I’m juggling a few parts of my business, trying to stay on top of my Spanish homework, having a social life, and being excited about my pregnancy, it has been a lot.

It’s all great things I’m blessed to even have to worry about, so I can’t complain, but needless to say, by the end of last week, I needed to make some muffins.

7 Tips To Keep A Healthy Diet & Mindset Throughout Your Week

7 Tips To Keep A Healthy Diet & Mindset Throughout Your Week

What I love about social media channels like Instagram Stories and Snapchat is that it allows me to share moments throughout my day that may inspire you to make healthy choices alongside me!

Of course, some moments are more helpful than others. Lu scrubbing dishes at the end of the day or shots of my cactus Bart probably don’t encourage you to get a sweat in, but there’s time for everything and I like to show a balanced day – and some of the sweet moments in my personal life.

However, I realize not everyone has time to watch my IG stories and some people aren’t even on Instagram, so today, I figured I’d round up some of the healthy things I do throughout the week in tip-form, in case some of you are looking for more inspiration this week!

Happy Mother’s Day to all my mamas and mamas-to-be out there!

I love Mother’s Day, because my mother is my best friend, and I love spending time with her, so an extra excuse to make a trip to see my mother is always welcomed. Now, she lives in Florida, so it’s an added bonus that we get to hang out on the beach altogether!

Today, I’m sharing a ‘fancy’ salad – one of those salads you may have eaten with your mother on a lunch date, at the spa, or while shopping at a high-end department store. That’s the kind – and it’s spiralized, gluten-free, and gorgeous!

Time Blocking: A Busy Person’s Guide to Getting It Done

Time Blocking: A Busy Person's Guide to Getting It Done

I mentioned time blocking on Instagram the other day when I shared a photo of the Inspiralized birthday cards I had made. Time blocking is what helped me achieve this goal (I’ve always wanted to create a little limited edition greeting card line, focused around spiralizing.)

I had a lot of people asking me about time blocking, so I figured I’d cover it in today’s #livinginspiralized feature!

Soy-Ginger Salmon with Teriyaki Zucchini Noodle Stirfry

Soy-Ginger Salmon with Teriyaki Zucchini Noodle Stirfry

In our new apartment, at this time of year and in my position in my bed, the sun shines directly on my face at around 6:25am. Like, direct sunlight, in my face.

At this point, I have two options. One, get up and start my day OR two, get up, pull the shades down, and go back to bed.

What I’m finding is that thanks to the gorgeous natural sunlight, I’m invigorated the moment I wake up, and I’m more motivated to get up and start my day off right.

Spiralized Carrot Cake Muffins with Coconut Cream Frosting

Spiralized Carrot Cake Muffins with Coconut Cream Frosting

Happy Monday! Two things:

  1. I forgot to place my can of coconut milk in the refrigerator the night before I made this recipe, so the frosting turned out to be more of a milky substance, less a fluffy frosting. Don’t make the same mistake – it really is important for the coconut milk to solidify so you can whip it into a frosting!
  2. It’s move-in day to our new apartment!!!!
