Chicken Lettuce Wrap Bowls with Spiralized Vegetables

Ahhh, who doesn’t love a good lettuce wrap?

I’ve never thought lettuce wraps were dinner-appropriate, though. They never seemed to fill me up – they were more of a fun appetizer or a lunch. However, I’ve always loved the flavor of them (especially the Asian inspired varieties), the crunch, the general texture, and how they don’t leave you feeling too full.

Now, I’ve recreated the chicken lettuce wrap into a much more fulfilling, hearty meal, using spiralized veggies and the beloved bowl meal concept. Shall we?

I’ve always been intimidated by “boeuf bourguignon.” I don’t know why, maybe because it’s very fancy sounding? No, can’t be that – I studied French for almost 10 years (I minored in it in college!)

I think I was intimidated because it’s supposed to be a sophisticated stew with perfectly cooked meat, and I’m not that well-versed in the art of the perfect sear.

As I’m writing this, it’s snowing (hey, #Niko!) and right before lunchtime, and I’m counting down the minutes until I can warm up these leftovers and have them for lunch.

I won’t be having them over spiralized veggies, because I’m done cooking for the week and my fridge is cleared, BUT I will be enjoying them over some cauliflower rice I prepped earlier this week.

After polling you all over on Instagram and Snapchat on whether you preferred me to share my non-toxic product transition or the final overhaul, the verdict was clear: you wanted to see the transition.

There are still some products that I want to find better alternatives to, there are still some products I need to swap to non-toxic. But today, I’m sharing with you what I’ve switched over to so far, and what’s working for me. I always love trying new products (and I think you should change up your beauty/skincare routine, so your skin doesn’t get used to it – just like your workouts), so if you like this post, I’ll do a follow-up post on this.
