The theme they gave us bloggers was a “Welcome to Autumn.” So I thought, what better than something roasted? Now that we can fill our kitchens with the heat of ovens and stovetops without dripping sweat, I’m going to be doing a lot of vegetable-roasting. Broccoli is one of my favorites to roast… the flavor of this veggie goes from zero to hero in 15 minutes.

I toasted a bit of farro to really evoke the “I want to be in my jammies right now” feeling. Farro is a delicately chewy Italian grain that has a similiar texture to wheat berries or barley. Yummy whole grains, roasted broccoli and Parmesan cheese …. this is a dream boat of a dish.
