During the week, I feel like we all get stuck in breakfast ruts. Of all the meals to spend time on, I feel like breakfast gets the least time, because it’s before the day starts, when you’re trying to make the most of your minutes before the work day (or life) takes ahold of you. That means lots of easy grab-and-gos – protein bars, yogurt and granola, smoothies, cereal, or just some quick scrambled eggs and toast.

On the weekends, we all tend to celebrate the schedule freedom by going out for brunch or just taking extra time in the mornings to make something more exciting for ourselves. Breakfast is a self care moment for me when I’m home – I like to really fuel myself with something new and enjoy the practice of cooking.

Turkey Apple Breakfast Patties

Recently, I went out for a brunch and enjoyed a turkey breakfast sausage patty that was so flavorful, I knew I had to recreate something at home. I decided to make a simple rosemary patty and serve it even more simply atop a bed of spring greens (arugula!) and top it with a fried egg and avocado, so that each bite gets a little creamy avocado and some runny egg. Lots of freshly cracked pepper and you have a flavorful, protein packed breakfast you can be proud of.

If you’re vegetarian, use a veggie burger here or a similar veggie-friendly “patty.”

  • 1 pound ground turkey
  • 1 small apple, Blade D
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • salt and pepper
  • 2 tablespoons avocado oil (or coconut oil)
  • to serve: fried eggs, avocado, greens


  1. In a medium mixing bowl, combine the turkey, apple, garlic powder, Italian seasoning, and season with salt and pepper. Mix thoroughly.
  2. Using wet hands, form the meat mixture into patties (about 10-12.)
  3. Heat half of the oil in a large skillet over medium-high heat. Once the oil is shimmering, add the patties and let cook for 5 minutes per side, flattening after the flip, or until browned and no longer pink on the inside.
  4. Transfer the patties to a paper towel lined plate. Repeat with remaining oil and patties until cooked through, about 5 minutes per side.
  5. Serve the patties as you desire. We recommend with fried eggs, avocado, and greens.
