I’m experimenting with a “5 ingredients or less” series. I want to put together a full week of recipes using, well, five ingredients or less!
As I was writing these recipes, I got a little confused as to what qualifies as an ingredient. Does olive oil count? Salt? Pepper?
Well, if you don’t count those pantry essentials, then, yes, this recipe is only five ingredients: garlic powder, red potatoes, mustard, chives and apple cider vinegar.
I’m thinking that in November, I’ll do a week full of recipes that are five-ingredient meals. This recipe isn’t a meal, it’s a side dish!
I used to always be stumped when making dinner and serving potatoes on the side. I’d always default to cubing them and roasting them. Pretty predictable, pretty uneventful.
Now, with the Inspiralizer, it’s never the same! I love spiralizing potatoes and turning them into something more exciting. I think we should come up with a hashtag for this like #ditchthedice – no more diced veggies!
This simple dijon-chive dressing gives these potato noodles a nice bite, perfect for pairing with a steak or say, a pork chop. The dijon mustard is key and complements heavy proteins.
Otherwise, these potato noodles would work well mixed together with some kale and topped with a simple roasted salmon.
I didn’t want to make any of these recipes, because I wanted you to focus on the possibilities with this simple potato salad!
Call me crazy, but I like cold potatoes. So, if you’d like to chill these, the more power to you! You can add them to salad or toss them with chilled quinoa!
Okay, I think that’s enough excitement over potatoes for one day.

Dijon-Chive Spiralized Potatoes
Ingredients
- For the potatoes:
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1 pound red potatoes Blade D, noodles trimmed
- salt and pepper to taste
- For the dressing:
- 1/2 tablespoon country dijon mustard
- 2 tablespoons olive oil
- 2 tablespoons chopped chives
- 1 teaspoon apple cider vinegar
- salt and pepper to taste
Instructions
- Place the olive oil into a large skillet and once heated, add in the potato noodles and season with garlic powder, salt and pepper. Cook for 10 minutes, tossing frequently, or until potato noodles cook through.
- Meanwhile, whisk together the ingredients for the dressing into a small bowl. Set aside.
- When potatoes are done, place into a large mixing bowl and pour over the dressing and toss thoroughly to combine. Serve immediately or refrigerate to chill.
