Pesto Zucchini Noodles with Chicken and Green Beans

I’m back with another recipe that I made for the Peloton Cycle blog.

After so many people asked me for simple weeknight meals, I shared one of my personal go-tos after a weekend at the farmer’s market: Pesto Zucchini Pasta with Chicken and Green Beans.

You can grab the recipe here.

In case you didn’t see this recipe when I linked to it on Instagram, I’m sharing it on the blog – it’s so easy, simple, and saves well in the refrigerator!

Pesto Zucchini Noodles with Chicken and Green Beans

Whenever I go to the farmer’s market, there are a few things I always get: basil, zucchini, and green beans. I roast, grill, and steam green beans all throughout the week – they’re great in pastas (like today’s recipe), tossed into salads, and served alongside your favorite protein.

Basil’s either used as a garnish, in a sauce, or of course, in my weekly pesto, because I’m addicted. In the summertime, I eat pesto zucchini noodles at least twice a week.

Whether you’re grilling the chicken and green beans or cooking it in a skillet like in this recipe, you’re going to love how simple this meal is, but how flavorful.

Added ingredients to my grocery so I can make this week!!! I love your quick, easy go to recipes.. Love them. My personal favorite is Zucchini Spagetti with parsley, lemon and Tuna. Have a great week!
Valarie Murphy says:

Mary says:
Is the zucchini not cooked?
Debbie says:
That's what I was just wondering!! How do I warm up the spiralized zucchini noodles now? Looks delish!
Marge says:
Why isn't there a print page for your recipes?
Sam says:
All the recipes sound great and im keen to try them, but I'm having to copy and paste and then edit them into a word doc so that i can print them out in a simple format. Its a bit of hard work
Wanda Stofer says:
Could you please just have a PRINT icon in plain view at the beginning of the recipe?? I love to print each and every one of the recipes, but have to "go around Robin's barn "to find the printed recipe.
Marge says:
Wanda, if you have found a way to print the recipes could you please share it with me? I have yet to figure it out and am getting frustrated. Thank you very much. Marge
Jes F says:
Yum! I love zucchini noodles simply paired with my favorite sauce like pesto or marinara :)
sheila says:
To print, I copy and paste and insert it into a word document. I think it prints better that way.
Maurita says:
Yes, I too would like an easy print page
Marcia says:
Just made this for my 19 year old meat lover. I gave it a taste -YUM! If he doesn't walk in and eat it soon it's going down my hatch! And my husband's salivating at the look of it! Thanks for an EASY, DELISH summer dinner! I love the mix of cold noodles and heated chicken and beans! Oh - he just walked in, sat down -YAY! He's eating it! A winner for someone who rarely eats his veggies. Thanks Ali!!
Ali Maffucci says:
Thanks so much, Marcia! Glad Ian loved it! Hope he and the family is well. And yes, I agree --- the combo of cold and heat is great here! Thanks again :)

I am very disappointed in your "Inspiralize Everything" cookbook! I don't know what method you used to create your index but the page references are totally wrong.
Ali Maffucci says:
Can you let me know which ones you found inaccurate? I haven't heard this complaint yet!

I'm a total emotional eater. 🤡🙋🏻when I'm feeling sad, mentally tired, or just 'off,' I eat. to me, food is therapeutic and cooking is cathartic. and while yes, I often reach for something chocolatey or a literal bag of bread 🍞, I usually want a long therapy session in the kitchen and since I don't bake, it usually ends up some sort of pasta, an epic sandwich, or like today, with this flavorful salad. 🥕⁣

I woke up in a little bit of a funk and I decided to make a fancy salad for lunch and this Roasted Carrot & Beet Farro Salad with goat cheese, pecans, cranberries, and frisee lettuce was born. 30 minutes later, I feel much better, and now I'm waiting to digest so I can hop on the @onepeloton, squeeze in a quick workout and end my day early to spend it prepping for Luca's birthday festivities tomorrow. 🎉 🎈 ⁣

speaking of - anyone have any tips for building a balloon garland??? 😅
