Sheetpan Blender Pancakes with Chocolate, Apple and Cinnamon
When I was a little girl, my mother would always make us pancakes on Christmas morning. I remember being more excited for the pancakes than the presents! Who doesn’t love pancakes, especially on Christmas morning?
However, I also remember having to wait so long for my mom to cook the pancakes! We’d have to stare at the Christmas tree with all of Santa’s bounty, waiting for the pancakes to be done. Well, I wish I could go back in time and give my mother this recipe for Sheetpan Blender Pancakes.
Now, you can definitely use regular pancake batter in this recipe (if you have a favorite, go for it!), but I highly recommend this one, because a) it’s made in a blender and b) it’s packed with nutrients and vegetables (there’s 1 full cup of butternut squash in this batter!)
The butternut squash is slightly sweet, so the pancakes have a little sweetness from that, along with a ripe banana and then of course, whatever toppings you pick along with maple syrup, if you choose. These pancakes are a spin off of my popular blender muffins! Here, we have spiralized apples and chocolate for another bit of sweetness and a little bit of soft crunch from the apple.
The toppings possibilities are endless – banana & walnut, blueberry, chocolate chip and raspberry, you name it! You’re going to love the time saving hack of these sheetpan blender pancakes, and I hope to see you make them on your Christmas morning!
Nutritional Information & Recipe
Sheetpan Blender Pancakes with Chocolate, Apple and Cinnamon
Ingredients
- 1 cup cooked cubed butternut squash
- 3 ripe bananas
- 6 large eggs
- 11 tablespoons rolled oats
- 3 tablespoons flaxseed meal
- 3/4 teaspoon cinnamon
- 1 apple Blade D
Instructions
- Preheat the oven to 350 degrees.
- Blend all of the ingredients together except for the apple in a blender until smooth.
- Lay out half of the apple noodles the batter out on a 10” x 12.5” x 1” well greased baking sheet.
- Pour over all of the batter and top with remaining apple noodles.
- Shake the pan until batter is evenly spread.
- Top with chocolate chips.
- Bake for 15-17 minutes or until pancakes are firm and edges may have browned.
- Slice and serve.
